PSA: We have jumped on the banana bread wagon and made it into a delicious vegan version. Perfectly sweet, moist, and topped with caramelised bananas, this delicious vegan banana bread recipe is super easy to make and customisable with your favourite stir-ins. You can add chopped walnuts or even an extra sprinkle of brown sugar to get that crispy sweet crust. The secret to our banana bread is dark brown sugar and a generous serving of Dibble Sour Cream which makes for superior tenderness. This family-friendly recipe is one you can bake on a weeknight and keep in the fridge for a whole week to satisfy everyone's sweet tooth. Kids love them, we are obsessed with them, and they're all vegan.

Ingredients 

  • 2 cups all-purpose flour

  • 1/2 cups white granulated sugar

  • 1/2 cup dark brown sugar

  • 3/4 teaspoon baking soda

  • 3/4 teaspoon salt

  • 3/4 teaspoon cinnamon

  • 1/2 cup non-dairy milk

  • 1 teaspoon apple cider vinegar

  • 1/2 cup Dibble Sour Cream

  • 3 large ripe bananas, mashed with a fork

  • 1/4 cup canola oil

  • 2 tablespoons maple syrup

  • 1 teaspoon vanilla extract

  • 1 large banana, for topping

Method

  1. Preheat the oven to 180°C. Lightly oil a loaf pan with baking paper and set aside.

  2. In a medium-sized mixing bowl, sift together all the dry ingredients (flour, white sugar, dark brown sugar, baking soda, and cinnamon).

  3. In a large mixing bowl, whisk together the non-dairy milk and apple cider vinegar until bubbly. Let it sit for 2 minutes.

  4. Add Dibble Sour Cream, mashed banana, canola oil, maple syrup, and vanilla extract, whisking until thoroughly combined.
  5. Add the dry ingredients to the large bowl of wet ingredients and mix together. Be careful not to overmix.
  6. Pour the batter into the prepared loaf pan and top with desired toppings. We used a piece of halved banana.

  7. Bake bread for about 1 hour, until tester inserted to the center comes out clean.
  8. Transfer to a wire rack and let cool for 1 hour before slicing.
  9. Enjoy!
