It’s late at night, you’re craving for something savoury. You go to the kitchen and you only have bread, mushrooms, and cheese. Sounds familiar? We can relate! Snack on this: one of our go-to toasted sandwich recipe. This spicy mushroom toastie is a delicious snack that can satisfy your late night cravings. Our vegan toastie is a personal favourite, not only because they are tasty, but they are also super easy to make! All you need is bread, mushrooms, olive oil, garlic, dairy-free butter and cheese, and of course, Dibble Chipotle Mayo for that extra spicy kick! Mushroom toastie takes only 5 minutes to prepare, which makes this dish perfect especially when you’re short on time but want something hot, filling, and comforting. The beauty of a vegan toastie is you can get creative with the fillings because it’s very versatile. You can change the mushroom to jalapeño, zucchini, tomato and basil, the option is endless.

Ingredients 

  • 500 g White Cup Mushrooms (thinly sliced)

  • 1 Tbsp Olive Oil

  • 1 Garlic Clove (minced)
  • 1 tsp Dairy-free Butter

  • 4 Slices of preferred Bread
  • 2 Slices of preferred dairy-free cheese
  • 2 Tbsp Dairy-free Butter (to spread)

  • 4 Tbsp Dibble Chipotle Mayo


Method

  1. In a medium pan heat the olive oil on medium to high heat with the garlic until aromatic.

  2. Add in the mushrooms and butter. Cook until golden brown for about 3-5 minutes.

  3. Season with salt and pepper and cook for another 1-2 minutes, stirring continuously.

  4. Transfer the mushrooms into a bowl and put aside to cool slightly.
  5. Evenly spread the butter on both sides of the bread and place a slice of the cheese on 2 slices of bread.
  6. Evenly divide the mushrooms on top of the cheese.

  7. Add Dibble Chipotle Mayo on top of the mushrooms.

  8. Place the remaining 2 buttered slices of bread on top.
  9. Place the sandwiches into a sandwich press and close tightly. 
  10. Toast for 3 minutes or until they are golden brown.
  11. Remove carefully from the sandwich press and enjoy!
