175 g bag of preferred corn chips
200 g canned black beans
1 small shallot, diced
1 Tbsp olive oil
200 g medium heat chunky salsa
2 Tbsp Dibble Sour Cream
1 medium avocado (halved and stoned)
1 garlic clove, minced
1 tsp coriander, roughly chopped
½ medium tomato, diced
1 Tbsp extra virgin olive oil
1 tsp sea salt
¼ tsp black pepper
2 Tbsp lime juice
In a medium pan, heat the olive oil on medium to high heat with the garlic and shallots. Stir until aromatic.
Add in the black beans and cook for 3-4 minutes with salt and pepper, stirring occasionally.
Place cooked black beans in a bowl and set aside and let cool slightly.
