If you love noodles as much as we do, then this Sesame Seared Tofu Noodles recipe will be your next go to meal. This Asian-inspired recipe is quick and easy to make and it can actually be served warm or cold, based on your preference. You can also add in extra vegetables and proteins to make this dish truly yours. These vegan noodles are not only healthy and full of flavour butit's made with Dibble Mayo and ridiculously easy to make. If you can make a good bowl of pasta, this dish is right up your alley! These plant based tofu noodles also work great as a side dish too. And if you add more greens then voila! You have yourself a noodle salad.

Ingredients 

  • 500g regular tofu, rinsed and dried

  • 1 cup sesame seeds (optional: mix of black sesame seeds too)

  • 1 cup all purpose flour

  • 1/2 cup Dibble Mayo

  • 250g glass or vermicelli noodles

  • 2 Tbsp olive oil

  • 1 medium brown onion, diced

  • 2 garlic cloves, finely sliced

  • 3 green onions, roots removed and cut on an angle

  • 1 medium red chilli, thinly sliced on an angle

  • 2 Tbsp soy sauce

  • 1 Tbsp sesame seed oil

  • 1 Tbsp mirin

  • 3 Tbsp coriander, roughly chopped

  • Squeeze of lemon juice

  • Pinch of salt and pepper

 


Method

  1. Cut the tofu into roughly 4 x 8 cm blocks and season all sides with salt and pepper.

  2. Arrange one bowl with the flour, one bowl with Dibble Mayo and one bowl with the sesame seeds. Using your left hand, coat the tofu in the flour and then place it in the mayo.

  3. Using your right hand coat the tofu with the mayo and place it in the sesame seeds. With your left hand, coat the tofu with the sesame seeds and put it aside on a clean plate.

  4. In a medium pot, bring water to boil and cook the noodles until al dente.

  5. In a medium pan on medium heat, add the oil and cook the onions until caramelised then add the garlic.

  6. Add the chilli and cook for 2 minutes or until aromatic.

  7. Add in the noodles with the soy sauce, mirin, sesame oil, green onions and a pinch of black pepper.

  8. Finish with the lemon juice, coriander and a sprinkle of sesame seeds. Keep this on low heat, stirring occasionally.

  9. In a clean medium pan on medium heat, add oil and the coated tofu. Cook all sides of the tofu until they're golden brown.

  10. Serve the noodles with the sesame-seared tofu.
